Baked Cod with Roasted Rainbow
Potatoes
1 pound of rainbow potatoes
1 pound of cod
1 lemon
fresh dill
fresh rosemary
2 tablespoons of olive oil
Salt and pepper
- Pre heat oven to 425 degrees
- Mix potatoes in olive oil and season liberally with salt, pepper, and fresh rosemary
- Bake for about 45 minutes
- In a separate lightly oiled pan; season both sides of cod with salt, pepper, dill and the juice the lemon
- Once potatoes are finished, lower oven temperature to 400 degrees
- Bake the cod uncovered for about 15 minutes until the meat is firm but not flaky
- Serve with potatoes
