Roasted Red Pepper and Goat Cheese Chicken Panini with Sweet Potato Fries
Lunch with a few surprising twists
Prep Time: 10 mins
- 4 slices of oven roasted deli chicken
- Roasted red peppers (we used the ones in a jar)
- 1 tablespoon goat cheese
- 1 tablespoon of chipotle aioli
- 2 slices of sourdough bread
- Frozen sweet potato fries
For honey maple sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
Panini
- Spread aioli on both slices of bread
- Fold chicken slices and place on bread
- Spread goat cheese on chicken
- Place roasted red peppers on top
- Close sandwich and place in panini press for 2 mins
- Slice sandwich in half
Sweet Potato Fries
- Cook sweet potato fries according to package instructions
- Whisk together Dijon mustard and maple syrup
- Drizzle mustard maple mixture over fries
