Roasted Tomato Basil and Shrimp Soup
Delicious simple soup for lunch or dinner
Prep Time: 30 min, Serves: 6
- 3 pounds vine ripe plum tomatoes
- 2 pounds shrimp
- 1 large onion
- 28 ounce can crushed tomatoes
- 3 tablespoons mince garlic
- 2 cups heavy cream
- 32-ounce bone broth
- 2 tablespoon concentrated basil paste
- Salt and Pepper to taste
- Roast tomatoes and onions over a hot grill or 400-degree oven for 30 minutes. Check every 5-10 minutes to rotate
- Allow tomatoes and onions to cool for 15 minutes then quarter the tomatoes and onions and add to a blender to puree
- Add puree mixture to large pot with minced garlic, crushed tomatoes, bone broth and basil paste
- Bring to a low simmer and stir occasionally for 30 minutes
- Add shrimp and let it simmer for 5-10 minutes
- Add heavy cream and salt and pepper to taste
