This is a great lunch recipe In our version we didn’t use mayonnaise – the avocado was enough to get the right texture for the mixture. The cucumber provided a refreshing taste and toasting the bread gave it the perfect crunch to compliment the filing.
Slow Cooker Vegetarian Chili Shredded cheese and sour cream were substituted for the garnish on our version. Also, we made two batches of this to accommodate the meat eaters in the house (everyone except for me). They loved this recipe with ground beef added. This is a keeper!
